Gas barbecues are becoming increasingly popular as the grill is ready for cooking in about 5 min,which can be a God-send in changeable climate Some basic equipment is needed to prepare a good barbecue meals.A good size apron,well padded oven glove or mitts,especially for handling hot skewers or griddle plates.Long-handled pure bristle brush for basting and bristle brush for basting and long-handled tongs. A flat metal plate or griddle plate an excellent way to cook barbecue meals . Mango Chicken KebabsINGREDIENTS: 1. 675 g (1 1/2 lb) boneless,skinless chicken breast 2. Coriandre(cilantro)leaves,for garnish. MANGO MARINADE 1. 2 fresh red chillies or 4 dried red chillies. 2. 1 small, ripe mango,peeled 3. 5 cm(2 inch) piece fresh ginger root,peeled and roughly chopped 4. 1/2 Teaspoon ground cinnamon 5. 2 garlic gloves,crushed 6. 2 tablespoons mild Madras curry powder 7. 2 tablespoons oil 8. 4 tablespoons plain yogurt Only 15 min to cook. METHOD: Cut the chicken into bite-sized pieces and put them in a glass bowl.Seed and finely chop fresh red chillies,or pour boiling water over the dried chillies and soak them for 10 min, then drain,seed and chop them roughly. Cut the mango flesh away from the stone and place it in a food processor with the remaining marinade ingredients.Blend until smooth.then spoon the marinade over the chicken pieces and mix well. Cover and leave to marinade for 5 hours. Thread the cubes of chicken on to bamboo skewers and cook on a prepared barbecue until browned(5-6 min),turning frequently and brushing with the marinade.Serve garnished with coriander leaves.Se more barbecue meals below. Mediterranean Lamb KebabsAnother recipe for barbecue meals .I hope you appreciate it. INGREDIENTS: 1.900g (2 lb) fillet or leg of lamb,boned 2.White Wine Marinade: 85 ml olive oil,150 ml dry white wine 3 2 Gloves garlic,crushed 4. 1 medium onion,finely grated 5. 2 Bay leaves,crushed 6. 2 Teaspoons dried oregano 7. 2 Teaspoons dried marjoram 8. salt and freshly ground black pepper 9. Flat-leated parsley,for garnish METHOD: Trim the fat off the lamb and cut the meat into 2.5 cm(1 inch) cubes.Put them in a bowl. Mix the marinade ingredients together and pour over the lamb,mix well.Cover and chill for 2 hours or overnight(this is better),turning the lamb in the marinade once. Thread the lamb on to 4 metal skewers and cook for 10 min on a prepared barbecue,turning the skewers and brushing with the marinade during cooking.Garnish with parsley and serve with warm pita bread. Chicken with Honey and GingerINGREDIENTS: 1. 8 Chicken thighs Honey and Ginger Glaze: 1. 3 Tablespoons honey 2. 2 Tablespoons dark soy sauce 3. 2 garlic gloves,crushed 4. 5 cm(2 inches) piece ginger root,grated 5. few drops of Tabasco METHOD: Combine together all ingredients for the glaze.Use the sharp knife,and make two cuts in the skin of each chicken thigh. Put the chicken thighs in a shallow bowl,spoon over the glaze and turn the thighs to coat them well. Place the thighs on prepared barbecue and cook for 20-25 min,turning and basting them with the glaze,until they are cooked through.if they begin to burn,move them to a cooler part of the barbecue. Pork Ribs on the GrillThis dish is a real delight to its flavor, appetizing appearance and spicy flavor.Ribs, cooked on the grill, will be the main dish on the holiday table, cook them and you will not regret it. INGREDIENTS: 1. Pork ribs(5-6 pieces) 2.Onion 3. 1 Tablespoon vegetable oil 4. Lemon juice(freshly squeezed) 5. Bay leaf 6.Turmeric 7.Coriander 8.Curry (I want to say a few words about the usefulness of the curry.In India, very often use in food curry.It is considered that Curry prevents cancer.) 9. Pepper 10.Ginger(Another indispensable spice for meat and all barbecue meals) 11.Salt to taste METHOD: Grate the onion on a fine grater.Mix all the spices with pork ribs,pour the vegetable oil, stir and leave in refrigerator for several hours. Preheat your grill,put the pork ribs.Cook ribs on grill about half an hour, if necessary, turning regularly.Serve with vegetables.If desired, you can use a dry red wine that perfectly combined with,almost all barbecue meals.
